Il Frantoio is a restaurant in the amazing frame of Colle Val d'Elsa, a small town in the province in Siena on a hill characterized by buildings built during the medieval period.
The restaurant offers a very characteristic environment in the marvellous rooms of the Palazzo Giusti, sets below the street of the Castle in the ancient part of Colle Val d'Elsa, with the rooms drawn by an old crusher of the 1800.
In the undergrounds of the ancient building they are preserved the ancient machineries that served for the extraction of the oil from the olives as the millstone to wheels in stone; a wood press to press the pasta of olives dated 1811.
Two big underground cisterns where the oil was picked up placed in the floor and the enchanting inside well built in bricks to trunk-conic form and with grille of protection in beaten iron. You fragment historical of the old Frantoio was active actually from the first of the 1900.
