Il Frantoio is a restaurant situated in Colle di Val D’Elsa in the province of Siena, the birth town of Arnolfo di Cambio and famous throughout the world for the production of Crystal. Colle is in the centre of Tuscany, 40km south of Florence and 25km north of Siena, Il Frantoio can be found in the splendid and uncontaminated Old Town of the city of Colle and is a truely unique and characteriestic location.
In fact the restaurant is in the medieval Palazzo Giusti, the basement area was excavated to house an oil mill which was set up in the 1800s.
You can still see old machinery amid the dining tables, machinery used to extract olive oil, for example millstones, a wooden press used to press the olive paste clearly dated 1811, two large underground cisterns where the oil was stored, and an enchanting conic-shaped inside well built in red brick with a cast iron protective gate.
The oil mill was running up until 1900. You can admre the original stone walls and terracotta flooring which have been carefully restored to their original historic style and beauty.
